                                                              Position Description

 

Position Title: Dining Room Manager                             Department:  Culinary

 **We expect to hire this position on or around April 1, 2018.

Reports to: Executive Chef                                            FLSA Designation: Exempt

 

 

POSITION PURPOSE:

 

Responsible to enhance the overall Resident experience through the provision of exceptional

oversight and culinary training to kitchen employees and directing of all menu offerings

through multiple dining venues.  This is to be handled in The Sterling Touch professional,

friendly, courteous, helpful and timely manner, resulting in a very high level of satisfaction for

Residents and their guests. You will work closely with the Executive Chef, Director of Facets, and all other Grand Living service departments to create an environment of well-being across all facets of the residents lives in keeping with the global FACETs philosophy.  Position is under the general guidance of the Executive Chef with a strong working relationship with the National Director of Culinary Operations in accordance with Community standards, processes, procedures and practices.

 

EXAMPLES OF DUTIES:

 

      Essential Functions:

 

    • Participate in Start Sterling! line up every day.
    • Greet the Residents, guests, fellow employees and vendors in a friendly and courteous manner.
    • Source, onboard, train and manage all dining service staff.
    • Ensure uniform and grooming standards of all dining service staff.
    • Assist Executive Chef with supervision and coordination of culinary activities for all dining venues: Bistro, Casual, Formal, Luminations memory care and Club Room, as well as special events and private functions.
  • Adhere to techniques of food presentation and food quality standards.
  • Ensure a prepared, properly staffed and efficient dining service for all dining venues.
  • Ensure E-menu is maintained for each dining venue and dining period.
  • Ensure all dining venues are presented using the Grand Living standards. 
  • Ensure all culinary and dining equipment is cleaned and maintained in good working order at all times.
  • Ensure dining venues are always safe and sanitary and in compliance with local and state regulatory requirements.

 

 

 

      Other:

 

Regular attendance in conformance with the standards as detailed in the Grand Living at Bridgewater Employee Handbook and as may be established by Grand Living from time to time, is essential to the successful performance of this position. Employees with irregular attendance will be subject to disciplinary action, up to and including termination of employment.

 

Due to resident expectations and both planned and unplanned events/occurrences, employees may be required to work varying schedules to reflect the business and service needs of the Community. This may include a weekend rotation of Manager on Duty up to one time per month,

 

Upon employment, all employees are required to fully comply with Grand Living's standards, procedures and processes, including all government and industry regulations, for the safe and efficient operation of the Community. Employees who fail to meet the Grand Living at Bridgewater expectations in all areas will be subject to disciplinary action, up to and including termination of employment.

 

      Supportive Functions:

 

In addition to performance of the essential functions, this position may be required to perform a combination of supportive functions including but not limited to special marketing events preparation, general/routine cleaning tasks using standard cleaning products as for compliance with any health, safety or regulatory standards, and other duties as requested, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the Community.

 

SPECIFIC POSITION KNOWLEDGE, SKILL AND ABILITY

 

The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the position, with or without reasonable accommodation, using some other combination of skills and abilities:

 

  • Excellent working knowledge of the fundamentals of cooking and dietary understanding.
  • Excellent working knowledge of accepted standards of sanitation.
  • Knowledge of operating all kitchen equipment, i.e., stoves, ovens, broilers, slicers, steamers, kettles, dish machine, etc.
  • Mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes.
  • Ability to read, write and understand the English language in order to direct, manage, hire and train kitchen staff, complete requisitions, read recipes and communicate with other employees as well as Residents and their guests.  
  • Sufficient manual dexterity of hands and arms in order to use all kitchen equipment and utensils (e.g. knives, spoons spatulas, tongs, slicers, etc.)
  • Ability to grasp, lift and/or carry, or otherwise, move or push on a hand cart/truck, goods weighing a maximum of 50 lbs.  

 

QUALIFICATIONS

 

Education:

 

Hospitality or Culinary experience required.  Combination of education and experience equivalent to graduation from Culinary school or any other combination of education, training or experience that provides the required knowledge, skills and abilities.

 

      Experience:

 

3 + years "front-of-house" experience preferred. Understanding or experience in dining room service standards in country club, fine dining, restaurant and/or upscale senior living hospitality experience ideal. 

 

      Licenses or certificates:

 

Ability to obtain any government (Federal or State) required license or certificate for Assisted Living.

 

      Grooming:

 

All employees must maintain a neat, clean and well-groomed appearance as detailed in the Grand Living at Bridgewater Employee Handbook, Orientation and Training.
