Position Title: Executive Chef                                       

Reports to: Director of Culinary Services                     

 

 Responsible to enhance the overall Resident experience through the provision of exceptional

oversight and culinary training to kitchen employees and directing of all menu offerings

throughout multiple dining venues.  This is to be handled in The Sterling Touch professional,

friendly, courteous, helpful and timely manner, resulting in a very high level of satisfaction for

Residents and their guests.  Position is under the general guidance of the Director of Culinary

Operations in accordance with Community standards, processes, procedures and practices.

 

      Essential Functions: 

  • Participate in Start Sterling! line up each day.
  • Greet the Residents, guests, fellow employees and vendors in a friendly and courteous manner.
  • Source, onboard, train and manage all dining service employees.
  • Supervise and coordinate culinary activities for all dining venues-Bistro, Casual, Formal and Club Room as well as special events and private functions.
  • Establish techniques of food presentation and food quality standards.
  • Standardize production of recipes to ensure quality offerings to the Residents at all times.
  • Develop and select recipes including offerings for various health related issues. Promote healthy dining options in accordance with Company standards and special diet needs in accordance with State regulations.
  • Estimate food consumption, plan, price and order food supplies for menus. 
  • Ensure all kitchen equipment is cleaned and maintained in good working order at all times.
  • Ensure kitchen is always safe and sanitary and in compliance with local and state regulatory requirements.

 

 Regular attendance in conformance with the standards as detailed in the Grand Living at Bridgewater Employee Handbook and as may be established by Grand Living from time to time, is essential to the successful performance of this position.

Due to resident expectations and both planned and unplanned events/occurrences, employees may be required to work varying schedules to reflect the business and service needs of the Community.

Upon employment, all employees are required to fully comply with Grand Living's standards, procedures, and processes, including all government and industry regulations, for the safe and efficient operation of the Community. 

 Supportive Functions:

 In addition to performance of the essential functions, this position may be required to perform a combination of supportive functions including but not limited to special marketing events preparation, Manager on Duty up to one time per month, general/routine cleaning tasks using standard cleaning products as assigned by supervisor, for compliance with any health, safety or regulatory standards, and other duties as requested, with the percentage of time performing each function to be solely determined by the supervisor based upon the particular requirements of the Community.

 

SPECIFIC POSITION KNOWLEDGE, SKILL AND ABILITY

 The individual must possess the following knowledge, skills and abilities and be able to explain and demonstrate that he or she can perform the essential functions of the position, with or without reasonable accommodation, using some other combination of skills and abilities:

 

  • Excellent working knowledge of the fundamentals of cooking and dietary understanding.
  • Excellent working knowledge of accepted standards of sanitation.
  • Knowledge of operating all kitchen equipment, i.e., stoves, ovens, broilers, slicers, steamers, kettles, dish machine, etc.
  • Mathematical skills necessary to understand recipes, measurements, requisition amounts and portion sizes.
  • Ability to read, write and understand the English language in order to direct, manage, hire and train kitchen staff, complete requisitions, read recipes and communicate with other employees as well as Residents and their guests.  
  • Sufficient manual dexterity of hands and arms in order to use all kitchen equipment and utensils (e.g. knives, spoons spatulas, tongs, slicers, etc.)
  • Ability to grasp, lift and/or carry, or otherwise, move or push on a hand cart/truck, goods weighing a maximum of 50 lbs.  

 

QUALIFICATIONS

  Education:

 College or Culinary school degree required.  Combination of education and experience equivalent to graduation from Culinary school or any other combination of education, training or experience that provides the required knowledge, skills and abilities.

 Experience:

 3+ years in Food and Beverage, county club, fine dining, restaurant, or senior living, environments. Cooking experience required along with saute and broiler experience. 

 

 Licenses or certificates:

 Ability to obtain any government (Federal or State) required license or certificate for Assisted Living. Serve Safe certified required.

 Grooming:

 All employees must maintain a neat, clean and well-groomed appearance as detailed in the Grand Living at Bridgewater Employee Handbook, Orientation and Training.
